3 simple recipes that will make Mum’s day!

This Mother’s Day treat mum by cooking dinner for her. Save money and the hassle of booking and eating out with one of these super easy baking tray meals. Chosen so that the kids can prepare and cook for Mum. To make it even easier, we have designed a complete meal kit for each dinner available online with optional extras such as dessert and upgrade quantities.

Sheet Pan vs Baking Pan

When collecting and preparing these recipes, I discovered that the term sheet pan is not really known here in Australia and is better known as a baking tray. Another confusion is that a baking sheet has no side, so tray and sheet are not really interchangeable. For these recipes, we want the baking tray (or sheet pan) that has sides.

Most households will have these; however, if you are stuck, we have added them to the meal kits as an option.

Roasted Boneless Leg of Lamb Dinner Kit

Roasted Boneless Leg of Lamb with Vegetables

A beautiful boneless leg of lamb with winter vegetable. Perfect for an Sunday night roast lamb dinner with easy clean up. This is the recipe that accompanies our dinner kit.

Equipment

Ingredients
  

  • 1 kg boneless leg of lamb approximate size
  • ½ kg baby potatoes halved
  • 3 each carrots
  • 1 head broccoli cut into florets
  • 1 red onion cut into wedges
  • 2 cloves garlic minced
  • 2 tbsp olive oil extra virgin
  • 1 tsp dried rosemary
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 200°C.
  • Place the seasoned vegetables in a single layer on a large sheet pan.
  • Roast the lamb and vegetables for 50 – 60 minutes, or until the internal temperature of the lamb reaches 60°C for medium-rare. Cover vegetables with foil if they are cooking too fast.
  • Remove the lamb from the oven and let it rest for 15 minutes before slicing and serving with the roasted vegetables.

Greek Baking Pan Dinner

Greek Baking Tray Chicken

A super easy chicken dinner with the flavours of Greece. All cooked on one baking tray for easy clean up

Equipment

Ingredients
  

  • 4 skinless boneless chicken breasts
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 2 Cloves Garlic minced
  • ½ tsp salt
  • ½ tsp pepper
  • 1 zucchini diced
  • 1 punnet cherry tomatoes
  • 1 orange capsicum diced
  • 1 yellow capsicum diced
  • 1 red onion diced

Garnish Options

  • Parsley leaves
  • Feta cheese crumbled
  • Tzatziki for drizzling

Instructions
 

  • In a large bowl, mix together the olive oil, garlic, lemon, oregano, salt and capsicums. Add the chicken and allow to marinate for 4-8 hours in the refrigerator.
  • Preheat oven to 230℃.
  • Arrange the vegetables onto a large greased baking tray and drizzle with a few spoonfuls of the marinade. Nestle the chicken breasts in and bake for 20-25 minutes or until the chicken reaches an internal temperature of 165F.
  • To serve, garnish with pistachios, tzatziki, feta and parsley. Serve with pita bread, if desired.

Notes

For faster cleanup, you can line the baking pan with baking paper
The best way to determine the internal temperature of your chicken is by using an instant-read thermometer.
Be sure to let the chicken breasts rest for 5 to 10 minutes before cutting. This helps keep the chicken breasts moist!
To make this dinner, you’ll need to marinate the chicken in advance. If you want to prepare it ahead of time, you can marinate the chicken breasts right after you buy them and freeze them until you’re ready to cook. Just let the chicken thaw in the fridge overnight so it can marinate as it thaws.

Italian Sausage Baking Tray Dinner Kit

Italian Sausage Baking Tray Dinner

Bursting with delicious Italian flavours and on your dinner table in 30 minutes or less with hardly any clean-up!

Equipment

  • 1 Baking Tray also called a sheet tray
  • 1 Baking Paper optional

Ingredients
  

  • 8 medium to large Italian Sausages
  • 1 red onion cut into chunks
  • ½ kg baby potatoes halved
  • 1 red pepper cut into chunks
  • 1 yellow pepper cut into chunks
  • 1 small zucchini cut into thick slices
  • 3 tsp smoked paprika
  • 1 tsp dried oregano
  • salt and pepper to taste
  • cooking spray

Instructions
 

  • Preheat your oven to 220°C and spray a large baking sheet with cooking spray, or for easy clean up line with baking paper
  • Add the sausages, red onion chunks, baby potatoes, bell pepper chunks, and zucchini slices to the greased baking sheet. Sprinkle the smoked paprika, the oregano and the salt and pepper over everything and toss well.
  • Arrange the sausages evenly on the baking sheet and nestle them into the vegetables.
  • Roast everything at 220°C for about 20-25 minutes, or until the sausages are cooked through, and the baby potatoes are soft. Use a meat thermometer to ensure the sausages have reached an internal temperature of at least 74°C.
  • Garnish with some fresh parsley and serve.
