Preheat your oven with oven tray to 180°C.
Remove the butter & reserve for later.
Place the fillet mignon on the preheated tray for 20 minutes (for medium rare – 55°C if using a digital thermometer).
Remove from the oven, place butter back on top and allow to rest for 5 minutes before serving.
