Our grass feed dry aged scotch fillet has be dry aged for at least 30 days in our himalayan salt chamber to provide extra flavour and tenderness.  If not displayed in our display window please ask our team if there is any available in the dry age chamber as they can cut to order for you.

Dry aging is the process by which large cuts of beef are aged for anywhere from several weeks to several months before being trimmed and cut into steaks. It’s a process that not only helps the steak develop flavor, but also makes it far more tender than it would be completely fresh.

Our dry age scotch fillet is all dry aged in house within our salt chamber.  We only place into the dry age chamber the very best cuts that our skilled master butchers know will produce the best steak at the end of the process.
