Cooking Tips
- Season generously with a rub of salt, cracked pepper and garlic powder and allow it to rest before cooking
- Maintain a steady smoker or hooded BBQ temperature of around 110-120°C and cook fat-side up over indirect heat
- Plan for approximately 1-1.5 hours per 500g depending on the size of your brisket
- When the internal temperature reaches around 70-72°C, wrap tightly in butcher's paper or foil to push through the stall and retain moisture
- Continue cooking until the internal temperature reaches 90-95°C, then rest in a towel-wrapped esky for at least 1 hour before slicing
- For oven braising: sear first in a heavy pan, then braise at 150°C for 4-6 hours until fork-tender
