Description

Moisture Enhanced Roast Beef takes the guesswork out of a Sunday roast. It is a whole beef roast that has been injected with a solution of water, salt, and seasonings — a process that locks in moisture from the inside out, so the meat stays juicy and tender through the oven cook. No brining, no marinating, no fuss — just a roast that comes out consistently succulent every time.

Our Moisture Enhanced Roast Beef is made in-house from grass-fed Australian yearling beef, selected for its clean, honest flavour and consistent quality. The moisture enhancement process works by distributing a light brine throughout the meat, which helps the roast retain its natural juices during cooking and carries a subtle savoury seasoning right through every slice.

This is a roast built for convenience and reliability. Whether you are feeding the family on a Sunday, hosting a casual lunch, or meal-prepping cold cuts for the week's sandwiches, this roast delivers the kind of tender, juicy slices that make a roast dinner feel like an occasion — without the hours of prep work that a traditional roast can demand.

Available in three sizes to suit your table, with custom sizes available on request — just leave a note in your order instructions.

Cooking Tips

Oven Roasting

  • Remove the roast from the fridge 30 minutes before cooking to take the chill off.
  • Pat the surface dry with paper towel and rub with a little oil and cracked pepper — the moisture enhancement has already handled the salt and internal seasoning.
  • Place in a preheated oven at 180°C. Roast uncovered, allowing approximately 25–30 minutes per 500g for medium, or adjust to your preferred doneness.
  • Use a meat thermometer for the most reliable results — aim for 55–58°C at the centre for medium, then rest before slicing.
  • Rest the roast under a loose foil tent for 15–20 minutes after cooking. This is when the juices settle back through the meat — skip it, and you will lose moisture to the cutting board.

Slow Roasting

  • Lower the oven to 140–150°C and extend the cooking time to approximately 45–60 minutes per 500g, covering loosely with foil for the first two-thirds of the cook.
  • This gentler approach works well for larger roasts, yielding an even more tender result.

Cold Roast Beef

  • Once rested and fully cooled, refrigerate the whole roast. Slice it cold for the cleanest, thinnest cuts — perfect for sandwiches, salads, or a weekend grazing platter.

Serving Ideas

  • Carve thick slices hot from the oven and serve with roasted potatoes, steamed greens, and a rich beef gravy for a classic Sunday roast.
  • Slice cold and pile onto fresh bread with horseradish cream, rocket, and pickled onions for a roast beef sandwich that rivals any deli.
  • Use thin cold slices to build a grazing platter with aged cheddar, cornichons, and crusty bread for effortless entertaining.

Add Moisture Enhanced Roast Beef to your next order and make roast night the easiest meal of the week.

Butcher's Tip: Trust the thermometer, not the clock. Every oven runs a little differently, and every roast is a slightly different shape — which means cooking by minutes alone is a gamble. Use a meat thermometer pushed into the thickest part of the roast, avoiding any injection pockets, and cook to temperature, not time. For a moisture enhanced roast, medium at 55–58°C internal is the sweet spot where the meat is fully cooked through but still carrying plenty of juice. Pull it 3–5 degrees before your target — it will keep cooking as it rests.

Bonus Tip: Slice across the grain, always. The direction you slice makes a bigger difference than most people realise. Identify the direction the muscle fibres are running and cut across them, not parallel with them. Cutting across the grain shortens the fibres and makes each slice more tender to chew. For a whole roast like this, you can usually find the grain by looking at the outside of the raw roast before cooking — it is harder to spot once it is browned. Make a mental note and slice accordingly once it has rested.
