Butcher's Tip: Wagyu fat has a lower melting point than standard beef fat, which is exactly what gives it that silky, buttery quality. That also means you should pull the steak off the heat at 52–55°C for medium-rare. Taking it beyond medium risks rendering out the very marbling that makes this cut special.

Bonus Tip: In the last 60 seconds of cooking, add a knob of butter, a crushed garlic clove and a sprig of thyme to the pan.
