Description

USA Style Pork Ribs are cut for the barbecue enthusiast who wants real meat on the bone. Each rack is selected from quality Australian pork, with a careful eye on the meat-to-bone ratio and the marbling that keeps ribs juicy through a long cook. They arrive fresh and ready for the heat, with no pre-cooking required.

The ribs come in three distinct flavour profiles, giving you the freedom to match the rack to the occasion. The Plain option is a clean canvas — season it your way, whether that means a dry rub, a wet marinade, or simply salt and pepper. Korean BBQ brings a savoury-sweet kick with subtle heat, built for those who like their ribs with a bit of personality. South Carolina BBQ is a tangy, mustard-based style that cuts through the richness of the pork and adds a bright, zesty edge that is distinctively different from the usual tomato-based sauces.

Low-and-slow cooking is where these ribs shine. A couple of hours in the smoker, kettle, or low oven transforms the connective tissue into gelatine and the meat into something that pulls cleanly from the bone with just the right amount of bite. They work brilliantly as the hero of a weekend barbecue spread or as a casual weeknight traybake with minimal fuss.

Cooking Tips

  • Remove the membrane from the back of the rack before seasoning for better rub penetration and a cleaner bite
  • Apply dry rub at least an hour before cooking, or overnight in the fridge for deeper flavour
  • Cook low and slow at 130°C to 150°C for 2 to 3 hours until the meat pulls back from the bone
  • Baste with your sauce of choice in the final 20 minutes and finish over direct heat to set the glaze
  • Rest the ribs for 10 minutes before slicing between the bones
  • For oven cooking, wrap the ribs in foil with a splash of apple juice for extra moisture

Serving Ideas

  • Slice into individual ribs and pile onto a platter with corn on the cob, coleslaw, and thick-cut pickles
  • Serve Korean BBQ ribs with steamed rice, kimchi, and a sprinkle of sesame seeds
  • Pair South Carolina BBQ ribs with a tangy potato salad and grilled corn with lime butter
  • Add USA Style Pork Ribs to your next order for barbecue-ready racks that deliver juicy, fall-apart results every time.

Butcher's Tip: Always remove the thin membrane from the underside of the rack before cooking. Slide a butter knife under it at one end, grip with a paper towel for traction, and peel it off in one go. This single step is the difference between ribs that are tender throughout and ribs that have a tough, chewy layer on the bottom.

Bonus Tip: Mix equal parts of your chosen barbecue sauce with a splash of apple cider vinegar and brush it on in the final 10 minutes over direct heat. The vinegar cuts the sweetness and helps the glaze set into a tacky, caramelised shell that clings to every rib.
