Cooking Tips
🍲 Oven Braise (Pot Roast)
- Sear the chuck roast in a hot pan with a little oil on all sides until well browned — this builds the flavour base.
- Transfer to a heavy casserole dish or Dutch oven with aromatics (onion, garlic, carrot, celery), a splash of red wine and enough beef stock to come halfway up the meat.
- Cover tightly and braise at 140–160°C for approximately 1 hour per 500g, or until the meat is completely fork-tender and pulling apart.
- Rest briefly before serving or shredding directly into the cooking liquid.
🥘 Slow Cooker
- Sear the meat first if time allows — it makes a noticeable difference to the final flavour.
- Add to the slow cooker with aromatics and enough liquid to cover the meat by roughly half.
- Cook on Low for 6–8 hours or High for 4–6 hours until fall-apart tender.
- Great for a set-and-forget weeknight meal or weekend cook-up.
🌶️ Casseroles, Stews & Curries
- Dice the chuck into 3–4 cm cubes and brown well in batches before adding to your pot.
- Works beautifully in rich beef casseroles, red wine braises, Asian-style braises, or a slow-cooked beef curry.
- Allow 2–2.5 hours in the oven at 160–180°C for diced chuck, stirring occasionally and keeping the liquid level consistent.
