The practical rule: pull large roasts 5°C before your target temperature. Pull steaks 2–3°C early. Chicken thighs vs breast: Thighs can go to 80–85°C and remain juicy — higher collagen and fat content means they don't dry out at temperatures that would wreck a breast. Breast should come off at 74–76°C and no higher.

Sausages: Always hit 75°C throughout. Don't rely on colour. A sausage can be deeply browned on the outside and still undercooked at the centre, especially on a high-heat grill.
